Q: Why do your products require refrigeration?
A: We recommend refrigeration for longer life and freshness of the product. Refrigeration is some of what makes our product unique.

Q: What types of peppers are used?
A: We typically use red chile peppers when they are readily available and in season. Otherwise we use a combination of other peppers that are in season

Q: How are your products sealed?
A: Sealing process is determined by the product. We use cold packing and heat packing methods.

Q: Why is some of the garlic greenish blue?
A: Garlic contains anthocyanins, water-soluble pigments that turn blue, green or purple in an acid solution. While this color transformation tends to occur more often with immature garlic, it can differ among cloves within the same head of garlic. The garlic flavor remains unchanged, and is totally edible without bodily harm.

Q: Have your products been tested and are you licensed?
A: Yes, all of our products' PH level has been tested and we have a licensed kitchen through the PA Department of Agriculture.
